Menu Plan Saturday 28th May 2016

We had some major food wins last week the mini meatballs, puff pastry tarts and shock horror the tuna fish cakes were all eaten and more was requested.

It's half term so I am not having to check lunch against dinner and Mr MC&W will still be eating all meals in London Town.

Saturday- Pizza and chips and this week, no not made from scratch but brought in. I must admit I do love a shop brought pizza.

Sunday - homemade cannelloni filled with spinach and ricotta, I will be trying the boys on this. My gut feeling is that it will not go down well but I love this meal and would like them to at least try. It's also a lovely messy meal to make so try to get them involved which may help them eat it.

Monday - roast lamb from our local farm shop (I have pre ordered), this will be a slow roasted leg of lamb with loads of veggies.

Tuesday - risotto I am a cheat and always do an oven baked one, with three children I can not be stirring a risotto for any length of time. We have ours with peas, sweetcorn, ham and loads of grated Parmesan  I add mushrooms to mine.

Wednesday- a lamb leftover dish. I love a lamb Ragu with balsamic vinegar, sweet and savoury all at once. Served with pasta and spinach.

Thursday- cheesy tomato puff potatoes this recipe I use from busy mums cookbook and I love it. Simple but tasty served with salad.

Friday- chicken curry the boys will have korma with mini poppadoms Mr MC&W and I will have something a little more spicy. I have to admit both sauces will be out of a jar and rice will be popped in the microwave.

Menu Plan Saturday 21st May 2016

Well it's been a while since I managed to find the time to sit down and write a meal plan. I promise you we have been eating but it's been very ad hoc and the meals were getting so dull.

Our main change has been that Mr MC&W has been working in London for the last few months. All his meals are eaten in town, I am eating dinner with the boys. Now trying to find meals that we all want to eat has become interesting.

Saturday - Mr MC&W and I are having chicken breast burgers. Roast chicken breast with avocado, bacon and a lovely spicy mayo served on Ciabatta. Boys will have make your own pizza with a homemade tomato sauce.

Sunday - Sausages roasted with potatoes and red onions in a whole grain mustard and honey sauce served with lots of green veggies for Mr MC&W andyself. I love this it's adapted from the busy mums cookbook and is a wonderful throw in the oven meal. Boys will have sausages and mash.

Monday - A simple special fried rice using chicken and children friendly veggies.

Tuesday - Carbonara but I am using the madhouse cookbook version with mascarpone as I do not like the meal too eggy and will swap bacon for thick sliced ham.

Wednesday - Puff Pastry tarts, I love these, I will make my special tomato sauce which is very sweet in the morning and we can all choose the toppings from things like ham, cheese, mushrooms etc served with salad

Thursday - tuna fish cakes we have not had these in a while I am going to make the boys almost mini ones and bake in the oven. Served with peas and sweetcorn plus if feeling adventurous the boys can try some sweet chilli sauce.

Friday - mini meatballs for the boys and proper ones for Mr MC&W and I served on spaghetti. I now cook this meal in the oven and seems to work really well.

Spring border review

Spring seemed to come and go in a bit of a blur of baby number three and work being done to the house. I thought I would do a little round up of the front border as its featured heavily in my pictures of weeds and I wrote a post about ideas for spring

Spring Bulbs and Wildlife

This border has always looked a total mess, the main problems are, it gets very little sunshine and our soil is thick clay. But it is at the front of the house so is seen by everyone who comes to visit, even if that is mainly the postman.

This Autumn we got a local gardening company to plant a whole load of Daffodils and Crocus through a membrane which in turn was covered with bark.

Spring came along and we got lots of lovely daffodils but the crocus were to be honest rather a disappointment. They fell over very fast and looked rather sad and sorry for themselves. I also managed to fail in my attempt to make it bee and insect friendly which has been a huge disappointment.

But this is all part of my learning and discovering what worked and what did not. Also time is a huge factor, this October I hope will be easier.

So my lessons learnt are I need to do more planting I would love some hellebores which I will buy next spring and plant. I may also try some Muscari and maybe some English Bluebells. I am sure another post will be written nearer the time.

So now I start to think about summer and adding colour into a rather brown space...... Pass the tea and cake this is going to be a bit of a hard one, but I will have a go and you can follow my susess and of course failure or two or three
